March 14, Fineko/abc.az. Oil was obtained from the remains of grapes (grape seeds) by cold pressing in the Scientific Research Institute of Viticulture & Winemaking of the Ministry of Agriculture, ABC.AZ reports, quoting Institute’s director Vugar Salimov.
He said that recently the world has been giving preference to waste-free technologies.
In viticulture and winemaking, a large amount of waste is produced during processing: “Because the juice yield during processing is about 75% of the grapes. Imagine that 25% to 30% of waste (residues) is formed. Waste includes seeds, husks. Approximately 300 tons of waste is generated per 1,000 tons. Therefore, the prospects of waste-free technology are very high in viticulture and winemaking. This year, oil was experimentally obtained from grape seeds, a method for its production was developed and patented. The technology of grape oil production is a complex process, the quality of the oil is greatly influenced by the conditions of growing grapes, the characteristics of the variety, the mechanical and biochemical composition of seeds, including the technology of processing grapes.”
