August 27, Fineko/abc.az. Azerbaijan has recorded a sharp rise in the production of black sturgeon caviar, considered a delicacy. According to ABC.AZ, citing the State Statistics Committee, in the first six months of the year, sturgeon-breeding plants produced 1,254 kg of black caviar. This is five times more than the 258 kg recorded in the same period of 2024.

Despite the production growth, export volumes decreased. Of the total, 330 kg of black caviar was sold abroad, amounting to $361,000. In 2024, from 430 kg of sturgeon caviar, the country earned $495,000. The main buyers of black caviar this year are the United Arab Emirates (140 kg) and the United States (120 kg).
