December 26, Fineko/abc.az. Due to decrease in saffron yields in 2023, spice prices have increased significantly both in the domestic market and abroad.
ABC.AZ reports that for example, in Iran, where more than 90% of saffron is produced, the price of premium spices has reached $1,400 per kg, which is twice as high as last year.
In other countries, the price can reach $1,800 per kg.
The main reason for such a sharp increase in prices is the change in weather conditions and lack of water in the region. Producers from Khorasan region of Iran report that this year's saffron harvest is 2-fold less than last year. The region was negatively affected by frosts in winter, dry spring and summer heat, with temperatures reaching 50 degrees Celsius. All surface water sources in this region have dried up.
The high price level of saffron is explained by its rarity and laboriousness of harvesting. Saffron is called "the gold of the desert." It prefers a drier climate, and Iran is the main producer of this spice in the world.
